Sam and I are determined to stay eating healthy. And I’m determined to make sure I eat more greens, like, all the time! So that lead to this recipe. This soup got me this text message: “My God, this soup is divine!” today.
1 red onion, chopped roughly
4 garlic cloves, chopped roughly
6 cups of fresh broccoli, chopped roughly into florets
7 1/2 cups of chicken (vegan) or vegetable stock
4 stalks of kale, washed and chopped roughly
400g can of mixed beans
1/2 of a 400g can of chickpeas
400ml can of coconut milk
3/4 cup of oats
salt and pepper to season
parsley to garnish
- In a large, heavy bottomed saucepan, sauté the onion and garlic in 1/4 cups of water until the onion is soft
- Add in the broccoli, stock and kale
- Bring the soup mixture to the boil
- Add in the beans and chickpeas and simmer until the broccoli is just soft (not soggy!)
- Stir in the coconut milk
- Pour the soup into a blender, add the oats and blend until very smooth
- Season with salt and pepper, add some chopped parsley and serve!
